Low Carb Egg Salad

I love egg salad and often have it during the day. I am usually fasting in the morning and don’t eat any breakfast, but around 12 pm I start to feel very hungry. Then I eat this salad and it keeps me going until almost dinner time.

Ingredients for low carb egg salad:
  • 3 eggs hard boiled
  • 30 g grated cheese
  • 30 g pickled gherkins
  • 30 g ham or salami
  • 3 TBSP mayonnaise
  • salt, pepper to taste
  • fresh herbs for garnish (optional)
Instructions
  1. Chop eggs or use cheese grater
  2. Cut ham and gherkins into small cubes
  3. Add cheese and mayonnaise
  4. Mix well together
  5. Season with salt and pepper
  6. Garnish with fresh herbs
