Keto Sushi
For the longest time, I had been going through some serious sushi withdrawals. It wasn’t until recently that I discovered KETO SUSHI! And you know what? Once I made it, I realized that it wasn’t as time consuming or difficult to make as I thought.
If you want to be able to make sushi, yet you’re living the keto life, then you should absolutely know how. As a big sushi fan myself, I’ve really missed good sushi since going keto. If I go to a restaurant and order myself some rolls, I feel like I’m way more full than other people at the table. This is due to the carbs in the rice that are used. That’s why switching to cauliflower rice is an absolute must when trying to make your own keto sushi. It’s honestly still hard to tell that it isn’t white rice while eating it, thanks to its perfect texture once cooked!
For anyone who has been wanting to try keto sushi, this recipe makes it so easy! This rolls like a classic roll, and you can use the same ingredients without any substitutions for your favorites!
Ingredients for Keto Sushi:
- 16 oz. Cauliflower
- 6 oz. Cream Cheese, softened
- 1-2 tbsp. Rice Vinegar (unseasoned)
- 1 tbsp. Soy Sauce (or coconut aminos)
- 5 sheets Nori
- 1 6 inch Cucumber
- 1/2 medium Avocado
- 5 oz. Smoked Salmon (or any seafood)
Instructions:
- Using a food processor, rice the cauliflower into rice-sized pieces by pulsing.
- Slice the cucumber on each end, then place the cucumber upright and slice off each side. Discard the middle and slice about 2 side pieces into small strips. Set aside in the fridge.
- In a very hot pan, add cauliflower rice and cook. Season with soy sauce as the cooking process happens, about 1 tbsp.
- Once the cauliflower is finished up and dried out some, add to a bowl with cream cheese and rice vinegar. Mix together well and set in the fridge until cool.
- Once the rice mixture is cooled, slice 1/2 an avocado into small strips and scoop out of the shell.
- Put a nori sheet down on a bamboo roller covered with saran wrap (this helps with sticking). Spread some of the cauliflower rice mixture over the nori sheet, add fillings and roll tightly.
