A unique combination of chia seeds, berries, coconut cream and cocoa – this no-cook dessert is both keto and dairy-free, yet creamy and satisfying. Rich in flavor and high in protein, it is perfect for the health enthusiast in all of us.

A serving size is about 1/4 Cup. You can increase the berries, cocoa and chia seeds if you like them as a thick pudding or add more coconut water to thin it out. A bonus of this recipe is that it is a raw and no heat is used so you don’t lose any nutrient value. Enjoy!

INGREDIENTS:

1 Cup Chia Seeds

1 Cup Coconut Cream

8 oz Coconut Water

1 Cup Raspberries

1 T Cocoa Powder

1 Cup Strawberries

1 Cup Raspberries

Cacao Nibs

 

DIRECTIONS:

  1. In a food processor or blender, puree Raspberries and Strawberries.
  2. Add coconut water, coconut cream and cocoa powder and mix.
  3. Transfer to a bowl and mix gently with chia seeds.
  4. Refrigerate overnight until chia seeds have swelled and doubled in size.
  5. Serve with fresh berries and cacao nibs on the top
