Low Carb Seafood Chowder
I love seafood chowder and it’s one of my favorites for a long time. The big question for me was what to substitute potatoes with? I saw different low carb variations with cauliflower and daikon radish but I didn’t like the taste. Then I tried to make it with swede and it was spot on for me. This low carb seafood chowder was creamy and satisfying and I like to use mussels with shells for extra flavor.
Ingredients:
- 1.1 lb/500g cod fresh or frozen
- 1 lb/450 g cooked mussels with shells
- 8 oz/250g salmon
- 3.5 oz/100 g cooked prawns
- ½ lb/230 g swede/turnip
- 1 medium onion chopped
- 2 TBSP butter
- 2 cups heavy cream
- 2 cups chicken stock
- Salt, pepper to taste
- ¼ tsp dried thyme
- ½ tsp of paprika
- 1 tsp dried parsley (optional)
- Fresh dill for garnish
Instructions for low carb seafood chowder:
- Peel and chop swede into cubes
- Cut cod and salmon into small chunks
- Melt butter in the large saucepan over medium heat
- Add onions and cook for a few minutes stirring frequently
- Add swede and cook for 5-6 minutes
- Add salmon and cod, pour in the chicken stock
- Simmer for about 10 minutes
- Add prawns, mussels, herbs, paprika, salt, pepper and heavy cream
- Simmer for another 6-7 minutes
- Serve with fresh dill
