Low Carb Cheesy Cauliflower Chicken Skillet

Cauliflower is a great substitutes for some starchy vegetables like potatoes and rice. You can find tons of recipes online. I came up with this low carb cheesy cauliflower chicken skillet. It ‘s easy to make and it tastes delicious too.

Ingredients:
  • 5 medium chicken thighs boneless and skinless
  • 1 medium head of cauliflower separated into florets
  • 1 small leek
  • 1 red or yellow bell pepper
  • 200 g grated cheddar cheese
  • salt to taste
  • oil for frying
Instructions for Low Carb Cheesy Cauliflower Chicken Skillet:
  1. Cut chicken into pieces
  2. Boil or steam cauliflower until almost ready but not too soft
  3. Heat oil in the skillet, add chicken and cook until ready
  4. Add chopped leeks and peppers and cook for a few minutes
  5. Add cooked cauliflower, mix everything thoroughly
  6. Season with salt
  7. Cook until piping hot
  8. Add grated cheese and let it melt all over vegetables
