Low Carb Coconut Bounty Balls
This little low carb coconut bounty balls are really good handy treats. I like to have them in the fridge if I feel like I need something sweet. You can make them in advance and keep in the fridge for almost a week. They have plenty of fat to keep you satisfied and sweet enough to feel like you really have a treat.

Low Carb Coconut Bounty Balls
This little low carb coconut bounty balls are really good handy treats. I like to have them in the fridge if I feel like I need something sweet.
Ingredients
- 200 g shredded coconut unsweetened
- 2 TBSP powdered Erythritol or sweetener of your choice
- 1 tsp vanilla extract
- 200 g coconut cream
- 2 TBSP coconut oil
- 50 g dark chocolate 85% cocoa
Instructions
- Toast the coconut in the oven at 175 C for about 5 minutes
- Let it cool down for about 10 min
- Mix the toasted coconut, sweetener, vanilla, coconut cream and coconut oil.
- Place it in the fridge for 10-15 minutes before forming the balls
- Make about 20 balls and place them in the fridge for about 30 min
- Melt chocolate in microwave or in double boiler
- Sprinkle chocolate over the balls
