Low Carb Coconut Bounty Balls

This little low carb coconut bounty balls are really good handy treats. I like to have them in the fridge if I feel like I need something sweet. You can make them in advance and keep in the fridge for almost a week. They have plenty of fat to keep you satisfied and sweet enough to feel like you really have a treat.

Ingredients
  • 200 g shredded coconut (unsweetened)
  • 2 TBSP powdered Erythritol or sweetener of your choice
  • 1 tsp vanilla extract
  • 200 g coconut cream
  • 2 TBSP coconut oil
  • 50 g dark chocolate 85% cocoa
Instructions
  1. Toast the coconut in the oven at 175 C for about 5 minutes
  2. Let it cool down for about 10 min
  3. Mix the toasted coconut, sweetener, vanilla, coconut cream and coconut oil.
  4. Place it in the fridge for 10-15 minutes before forming the balls
  5. Make about 20 balls and place them in the fridge for about 30 min
  6. Melt chocolate in microwave or in double boiler
  7. Sprinkle chocolate over the balls
