Low Carb Coconut Bounty Balls

This little low carb coconut bounty balls are really good handy treats. I like to have them in the fridge if I feel like I need something sweet. You can make them in advance and keep in the fridge for almost a week. They have plenty of fat to keep you satisfied and sweet enough to feel like you really have a treat.

Ingredients
  

  • 200 g shredded coconut unsweetened
  • 2 TBSP powdered Erythritol or sweetener of your choice
  • 1 tsp vanilla extract
  • 200 g coconut cream
  • 2 TBSP coconut oil
  • 50 g dark chocolate 85% cocoa

Instructions
 

  • Toast the coconut in the oven at 175 C for about 5 minutes
  • Let it cool down for about 10 min
  • Mix the toasted coconut, sweetener, vanilla, coconut cream and coconut oil.
  • Place it in the fridge for 10-15 minutes before forming the balls
  • Make about 20 balls and place them in the fridge for about 30 min
  • Melt chocolate in microwave or in double boiler
  • Sprinkle chocolate over the balls
