One more simple chicken recipe. Try it next time for you lunch or dinner. It’s nice, soft and tasty.  Also it has only 2 g carbs per serving and you can easily serve this with more vegetable or salad.

Low Carb Baked Mozzarella Chicken

Ingredients
  • 2 large chicken fillets
  • 1 small leek
  • 8 cherry tomatoes
  • ½ red sweet pepper
  • 100 g grated mozzarella cheese
  • 2 TBSP mayonnaise
  • Salt, pepper to taste
  • Oil for frying
  • Chopped parsley for serving
Instructions
  1. Preheat oven to 200 C
  2. Cut each fillet in half lengthwise
  3. Heat oil in the frying pan and cook chicken for about 2 min on each side
  4. Season with salt and pepper
  5. Place on the prepared baking tray
  6. Chop leeks and pepper and cook them in the same pan until half cooked
  7. Cut cherry tomatoes in half (don't cook)
  8. Place cooked vegetable and tomatoes on the top of each chicken piece
  9. Sprinkle with mayonnaise
  10. Add cheese
  11. Cook for about 15-20 min until cheese golden brown
