
This low carb tuna salad is tasty, very filling and a satisfying fix for your lunch or dinner. This recipe is very easy to make and modify. If you are busy and you need to make something quickly this tuna salad is the way to go. It’s especially good on hot weather days, so refreshing with all these goodness inside.
- 1 can tuna in brine
- 100 g iceberg lettuce
- 200 g cucumber
- 1 red bell pepper
- 1 tomato
- ½ red onion
- 50 g cheddar cheese cut in small cubes
- 3 TBSP mayonnaise
- 1 TBSP lemon juice
- Salt to taste
- Cut lettuce, cucumber, peppers. onions and tomato.
- Mix in the big bow and add salt.
- Divide into 2 portions on the big plates.
- Drain tuna and spread on the top of each salad evenly
- Mix mayonnaise with lemon juice and use for dressing
- Sprinkle cubed cheese on the top
