Low Carb Breakfast Bacon Egg Cups

I am not a breakfast person but  I occasionally cook something for my family. These low carb bacon egg cups are easy to prepare and are fun to eat.  Add some tomatoes, spinach or anything you like. You can make them ahead and use as snack or serve them with salad for your lunch. Freeze them to use later or keep in the fridge for up to 3 days.

Ingredients for bacon egg cups:

  • 6-8 Slices Smoked Streaky Bacon
  • 60 g Grated Cheddar
  • 6 Large Eggs
  • Salt, pepper to taste
Instructions:
  1. Preheat oven to 200 C
  2. Spray prepared muffin tray with oil
  3. Place bacon into each cup
  4. Add cheese
  5. Break eggs into each cup
  6. Season with salt an pepper
  7. Cook for 10-15 minutes
