Low Carb Smoked Chicken Salad

I like smoked meats but it is not a common food in our house. I got some nice smoked chicken legs one day and I was wondering what I can do with it. Then I came up with this low carb smoked chicken salad recipe. I served this recipe warm but if you are in a hurry you can always serve it cold. As always you can easily change ingredients of this salad and have something completely different in the end.

Ingredients for Low Carb Smoked Chicken Salad:
  • 350-400 g smoked chicken legs or use breast
  • 1 red or yellow bell pepper
  • 1 small red onion
  • ½ large cucumber (about 200 g)
  • 5-6 cherry tomatoes or 1 regular tomato
  • 100 g mayonnaise
  • 1 TBSP lemon juice
  • Salt, black pepper to taste
  • Oil for frying
Instructions for Low Carb Smoked Chicken Salad:

  1. Prepare vegetables and make salad.
  2. Season salad with salt, pepper and lemon juice.
  3. Heat little bit of oil in the frying pan
  4. Add chicken and fry until hot.
  5. Combine with salad
  6. Add mayonnaise.
  7. Serve warm!
