Low Carb Smoked Pancetta Mushroom Crustless Quiche

Here is an idea for your next breakfast or lunch. This low carb smoked pancetta mushroom crustless quiche easy to prepare and it’s delicious and satisfying.

Pancetta is an Italian bacon made of pork belly meat, that is salt cured and spiced with black pepper, and sometimes other spices. Pancetta in Italy is typically consumed raw. (WIKIPEDIA)

I love to make this recipe for lunch and use leftovers next day for breakfast. If you don’t have pancetta then you can use smoked bacon or smoked ham.

Ingredients for smoked pancetta mushroom crustless quiche:
  • 200 g Italian Smoked Pancetta (or smoked bacon)
  • 250 g Chestnut Mushrooms (or any other mushrooms)
  • 100 g Red Onion
  • 6 Large Eggs
  • 60 ml Fresh Heavy Cream
  • 5 tbs Parmesan (Grated)
  • 100 g Grated Mozzarella
  • 100 g Mild red cheddar
  • Oil for frying
  • Salt, pepper to taste
Instructions:
  1. Preheat oven to 200 C
  2. Slightly fry your pancetta in the skillet over medium heat
  3. Add sliced onions and mushrooms
  4. Cook for a few minutes until nearly cooked.
  5. Place into prepared baking dish.
  6. Whisk together eggs, cream, parmesan cheese, salt and pepper.
  7. Pour mixture over pancetta/mushrooms/onions.
  8. Top up with mozzarella and cheddar
  9. Cook for about 20 min or until top golden brown
