As I mentioned before we eat quite a lot of fish. This fish pie one of my life savers when I don’t have much time to spend in the kitchen. Healthy vegetables and fish covered with mozzarella cheese… Perfect low carb dinner. I used cod fillets for this recipe but you can use any fish you have or prefer. Same way goes with vegetables. Be creative!

Ingredients
  • 300 g cod fillets
  • 200 g zucchini
  • 1 red ramiro pepper
  • 30 g red onion
  • 2 large mushrooms
  • 1 Tbs vegetable oil
  • 50 ml mayonnaise
  • 2 tbs water
  • 60 g grated mozzarella cheese
  • 1 tsp lemon juice
  • salt
  • black pepper
Instructions
  1. Preheat oven 200C
  2. Prepare and cut vegetables
  3. Heat oil in the frying pan and fry vegetables until half cooked
  4. Place fish on the baking dish and drizzle with lemon juice, salt and pepper
  5. Spread vegetables evenly over fish
  6. In separate bowl mix together mayonnaise, salt, pepper and water
  7. Pour mixture over vegetables
  8. Cover with grated cheese
  9. Cook for 20-30 min or until cheese brown
  10. Add some fresh herbs if you like
  11. Serve and enjoy!
