Low Carb Pork Bombs Bacon Wrapped Stuffed with Brie Cheese

This recipe for low carb pork bombs stuffed with brie cheese were so good that I still can taste them. They were a big hit in my house even though I thought my kids wouldn’t like them because of the brie cheese. I was completely wrong. This recipe is now regular in our menu rotation. The best part of this pork recipe is that there is almost zero carbs and you can enjoy it without any guilt.

Ingredients:
  • 4 pork medallions
  • 12 rashers smoked streaky bacon
  • 100 g brie with garlic and herbs (or use plain)
  • Salt, pepper to taste
Instructions for pork bombs:
  1. Preheat oven to 200C
  2. Pound thinly each medallion with meat hammer
  3. Season with salt and pepper
  4. Divide brie into 4 equal parts
  5. Place cheese in the middle of each medallion and close the medallion over the cheese, pressing the edges firmly together to seal.
  6. Wrap each piece with 3 slices of bacon.
  7. Place into prepared baking dish
  8. Cook for about 20 minutes
