Low Carb Cauliflower Prawns Fried Rice

Cauliflower is one of the best vegetable for low carbers in my opinion. There are so many things you can do with it. It is so easy to replace potatoes and rice with cauliflower. The possibilities are endless. This cauliflower prawns fried rice recipe is very simple and adjustable. You can add leeks instead of red onions, add some chili peppers and you have the spicy version. If you’re really want to reduce the carb count just leave out the sweet peppers and you still have nice dish in the end. Try to add some Chinese spices or mix spices to add some flavor. Don’t be afraid to experiment. You can add couple of eggs in the end if you like.

Ingredients:
  • 1 medium head of cauliflower
  • 400 g cooked frozen prawns
  • ½ red onion
  • 1 red or yellow sweet pepper
  • ½ garlic powder
  • salt and pepper to taste
  • 1 TBS lemon juice
  • oil for frying
  • fresh chives for garnish
Instructions for Low Carb Cauliflower Prawns Fried Rice:
  1. Separate cauliflower into florets
  2. Place into a food processor and pulse until the mixture resembles rice
  3. Heat the oil in a large skillet over medium-high heat
  4. Add chopped onions and peppers
  5. Cook stirring frequently, until softened
  6. Add the cauliflower
  7. Season with salt, pepper and garlic
  8. Continue to cook until the cauliflower about half cooked 2-3 minutes
  9. Add defrosted prawns and cook for additional 3-5 minutes until ready
  10. Garnish with the chives, sprinkle with the lemon juice while serving
