Avocados are great on low carb diet. They are full of fiber (about 10 g in one medium sized avocado), gluten free, dairy free, cholesterol free and suitable for vegans and vegetarians. They are also high in healthy fats that very important when you live LCHF (low carb high fat) life and over 20 vitamins and minerals.
How to choose ripe avocado? They are ripe when they seems heavy for their size, slightly soft and dark in color.
I love avocados in salads, dips or as a snack. This salad is very easy to make and you can eat it on its own or use as a side dish for you dinner or lunch.

Ingredients
  • 2 Avocados
  • 200 g Cucumber
  • 30 g Red Onion chopped
  • 2 Tbsp Mayonnaise
  • 1 tsp Lemon Juice
  • Salt to taste
Instructions
  1. Cut or slice avocados and cucumber
  2. Add chopped red onion
  3. Add lemon juice, salt
  4. Mix everything together
  5. Serve with mayonnaise or any other dressing of your choice
