Low Carb Cottage Pie

This low carb cottage pie is great comfort food. It was delicious straight from the oven. You won’t  even miss potatoes in this recipe. Overall this recipe is guilt free without all starchy vegetables in it (only 5 g total carbs per serving). You can serve it with green salad, your favorite vegetables or on its own.

Ingredients:
  • 400 g minced beef
  • 1 red onion
  • 100 g passata, canned tomatoes or tomato sauce
  • Medium head of cauliflower
  • 150 g grated cheddar
  • 100 g grated mozzarella
  • 1 tsp garlic powder
  • salt, pepper to taste
Instructions for low carb cottage pie:
  1. Preheat oven to 200 C
  2. Boil cauliflower until soft, drain and blend with stick blender until smooth. Add salt and pepper to taste.
  3. Chop onions
  4. In the large skillet over medium heat brown the beef
  5. Add chopped onions, tomatoes, garlic, salt and pepper
  6. Place thin layer of mashed cauliflower into prepared baking dish
  7. Add cooked beef, cover with leftover mash and top up with cheese.
  8. Cook for 35-40 minutes
  9. Serve and enjoy!
