Low Carb Bacon Spinach Casserole

I love this low carb bacon spinach casserole recipe for its simplicity. You can put everything together just under 10 minutes and let the oven make its magic. I used frozen spinach but fresh spinach will work perfectly in this recipe too. I often make it for lunch and have leftovers for breakfast next day.

Ingredients for low carb bacon spinach casserole:
  • 5 eggs
  • 4 slices of bacon
  • 2 tbsp mayo
  • 300 g (10 oz) frozen spinach
  • 150 g (5 oz) grated mozzarella
  • 1 TBSP butter
  • Salt, pepper to taste
Instructions:
  1. Preheat oven to 200 C (400 F)
  2. Cook bacon and chop it
  3. Using the same skillet melt a butter and warm up defrosted spinach
  4. Combine spinach and bacon in prepared baking dish
  5. Whisk eggs with mayonnaise
  6. Season with salt and pepper
  7. Add mozzarella cheese
  8. Pour mixture over spinach and bacon
  9. Cook for 15-20 minutes
