Low Carb Egg Muffins with Ham

These low carb egg muffins with ham are a great solution for breakfast and snacking. My kids just love them. These little snacks are easy to make, low in carbs and very convenient on the go. You can use any other meats like bacon, chicken, turkey or beef. You also can add different vegetables if you prefer. This recipe is very flexible.

Ingredients for low carb egg muffins with ham:
  • 5 eggs
  • 3 tbsp mayo
  • 100 g ham
  • 1 small tomato
  • ¼ red onions
  • ½ red pepper
  • 80-100 g grated cheddar cheese
  • Dried parsley
  • Salt to taste
Instructions:
  1. Preheat oven to 200C
  2. Chop ham, tomato, onions and peppers
  3. Divide equally into 12 cup muffin tray
  4. Whisk eggs with mayonnaise
  5. Add salt to taste
  6. Fill each muffin cup evenly
  7. Top with cheese
  8. Sprinkle with parsley
  9. Cook for 10-15 min until golden brown and firm to touch
