Roasted Drumsticks with Vegetables

After chicken thighs, drumsticks are one of my favourite parts of the chicken. This one-pan recipe for roasted drumsticks with vegetables is full of flavor and very easy to make. Perfect for a quick fix for dinner or lunch.

Ingredients:
  • 900 g chicken drumsticks (about 9)
  • 1 sweet red pepper
  • 1 tsp paprika powder
  • ½ tsp dry oregano
  • ½ tsp dry basil
  • 1 tbsp oil
  • salt, pepper to taste
  • 200 g, Zucchini
  • 200 g chopped canned tomatoes
  • 1 tsp garlic powder
  • 1 medium red onion
Instructions for Roasted Drumsticks with Vegetables:
  1. Preheat oven to 200C
  2. Place drumsticks into a bowl and add tomatoes, spices, herbs, salt and pepper
  3. Leave in the fridge for at least an hour
  4. Preheat oven to 200C
  5. Chop zucchini, onions and peppers
  6. Place on the baking tray or baking dish
  7. Sprinkle with oil, season with salt and pepper
  8. Place chicken on the top of vegetables and roast in the oven for about 50 minutes
