Low Carb Stuffed Peppers

If you like peppers this dish is definitely for you. I used beef and cheese for this low carb stuffed peppers recipe. You can use different fillings like chicken, seafood, sausage meat or cauliflower rice. Don’t be scared to experiment. You also can use your slow cooker or instapot for this recipe.

Ingredients:
  • 4 sweet peppers (red or yellow)
  • 350 g ground beef
  • ½ red onion
  • 150 g grated cheese
  • 1 garlic clove
  • 2 TBSP mayonnaise (optional)
Instructions for low carb stuffed peppers:
  1. Cut peppers in half lengthwise and place into the saucepan.
  2. Cover with boiling water, bring to boil and drain.
  3. Brown beef with onions and garlic
  4. Stuff peppers with beef and place into prepared baking dish
  5. Sprinkle with cheese
  6. Cook at 200 C for about 30 minutes
  7. Sprinkle with mayonnaise before serving (optional)
