
Chicken and bacon is a perfect combination for almost any dish. I like this low carb chicken bacon salad warm but it’s still very good cold too. If you like things a little bit spicy just add some chili or cayenne pepper while cooking meat (taco spices mix working well too). You also can omit mayonnaise and use your favourite salad dressing or olive oil instead.
- 2 chicken fillets
- 4 slices of smoked bacon
- 100 g iceberg lettuce
- 200 g cucumber
- 1 red or yellow bell pepper
- 1 tomato
- ½ red onion
- 3 TBSP mayonnaise
- 1 TBSP lemon juice
- Salt to taste
- Cut chicken and bacon into thin slices
- Heat oil in the frying, add chicken, season with salt and pepper
- When almost cooked add bacon and cook until ready
- Cut lettuce, cucumber, peppers. onions and tomato.
- Mix in the big bowl
- Add salt and lemon juice
- Divide into 2 portions on the big plates.
- Dress with mayonnanise
- Place chicken and bacon on the top
- Serve warm!
