Low Carb Stewed Cabbage with Chicken

I love cabbage a lot. This cruciferous vegetable is very nutritious and is low in carbs too. This low carb stewed cabbage with chicken is one of my favourite cabbage recipes. Stewing cabbage is required some time and you want to make sure you have at least 1 hour and a half. I like to stew my cabbage on very low for a good while, for me the longer it stews the better the result in the end. I like adding hot dogs in the end, it gives nice smoky flavor to the cabbage but this is not necessary.

Ingredients:
  • 500 g shredded cabbage
  • 2 medium chicken breasts
  • 3 frankfurters
  • 2 tbsp oil
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1 cup of water or chicken stock
Instructions for Low Carb Stewed Cabbage with Chicken:
  1. Cut chicken into pieces
  2. Shred cabbage
  3. Heat oil in the pot with thick bottom
  4. Add chicken and cook for a few minutes
  5. Add cabbage, garlic, salt and pepper, chicken stock or water
  6. Stew on low for at least an hour
  7. Add more liquid if required
  8. Chop hot dogs and add them in the end
  9. Cook for 10 more minutes
  10. Add more seasoning to taste
