Low Carb Slow Cooked Chicken

This low carb slow cooked chicken is a great solution if you don’t have much time for cooking. Rub your chicken with spices, stick it into the slow cooker and a few hours later you have a delicious dinner ready.  For better crispier results raise chicken with tin foil balls.

Ingredients:
  • Small whole chicken (1200g)
  • 1 tsp smoked paprika
  • 1 tsp plain paprika
  • 1 tsp garlic powder
  • ½ tsp chilli powder (optional)
  • 1 tsp onion powder
  • 3 tbs olive oil
  • ½ tsp ground black pepper
  • 2 tsp pink sea salt
  • 1 cup of water or chicken broth
Instructions for low carb slow cooked chicken:
  1. Cut you chicken in half between breasts with kitchen scissors or you can butterfly it and remove backbone (spatchcock method). I prefer to keep backbone.
  2. In the small bowl mix all dry ingredients together
  3. Rub olive oil all around chicken. Do same with spices.
  4. Slow cook on HIGH for 5 hours or on LOW for 8 hours
