Low Carb Meringues

These low carb meringues are great treats with almost zero carbs, but to make them right could be very tricky. I tried a few different ways to make it and this recipe seems like the best. I used powdered erythritol but xylitol works well in this recipe also. You can serve with fresh berries and whipped cream.

Ingredients for low carb meringues:
  • 4 egg whites, room temperature
  • 6 tbsp powdered erythritol or 5 tbsp powdered xylitol
  • ½ tsp vanilla extract
  • ¼ tsp cream of tartar
Instructions:
  1. Preheat oven to 120 C (250 F)
  2. Line two baking sheets with parchment paper
  3. In clean bowl, combine egg whites, sweetener, vanilla and cream of tartar .
  4. Beat until medium stiff peaks form and mixture becomes slightly glossy. Do not beat until stiff.
  5. Spoon mixture into 20 large meringues.
  6. Bake for 20 minutes at 120C. Then reduce oven temperature to 90C and continue to bake for another 20 minutes, until crisp and tops are just starting to brown.
  7. Turn off oven and let meringues inside for 2 hours or longer.
  8. Remove and peel off parchment.
