Low Carb Cumin Pork
I got the inspiration for this recipe from my days working in a Portuguese restaurant. The original dish also had flour and mussels in it. Unfortunately mussels are quite high in carbs and so is the flour. I just omitted them all together and added some vegetables instead. This low carb cumin pork has quite a strong taste but I personally like it a lot. If you like cumin you’ll like this dish too.
Ingredients:
- 300 g pork (3 thick chops)
- 1 small red onion
- 1 red pepper
- 1 stalk celery
- oil for frying
Marination:
- 50 g tomato paste
- 2 tsp dry cumin
- 0.5 tsp chilli powder
- 1 tsp garlic powder
- 50 ml olive oil
- 1 tsp salt
- 1 TBSP balsamic vinegar
- 50 ml white wine vinegar
Instructions for Low Carb Cumin Pork:
- Cut pork into long strips as thinly as possible
- Mix well all ingredients for marinade
- Combine marinade and pork and leave to marinate for at least an hour

- Chop onions, peppers and celery

- In the large skillet heat oil over medium heat
- Add pork and cook until brown

- Place pork into sauce pan and add about cup of water
- Let it stew over medium heat for about 30 minutes

- Mean while stir fry vegetable in the pan just for couple of minutes

- Combine vegetables with pork and cook for another 15-20 min
- Add more water if required
- Season with salt and pepper to taste
