I got inspiration for this recipe from my days working in Portuguese restaurant. Original dish also had flour and mussels in it. But mussels quite high in carbs and i decided to omit them. It has quite unusual taste but it’s nice. If you like cumin you’ll like this dish.

Ingredients
  • 300 g pork (3 thick chops)
  • 1 small red onion
  • 1 red pepper
  • 1 stalk celery
  • oil for frying
Marination
  • 50 g tomato paste
  • 1,5 tsp dry cumin
  • 0.5 tsp chilli powder
  • 1 tsp garlic powder
  • 50 ml olive oil
  • 1 tsp salt
  • 1 TBSP balsamic vinegar
  • 50 ml white wine vinegar
Instructions
  1. Cut pork into long strips as thinly as possible
  2. Mix well all ingredients for marinade
  3. Combine marinade and pork and leave to marinate for at least an hour
  4. Chop onions, peppers and celery
  5. In the large skillet heat oil over medium heat
  6. Add pork and cook until brown
  7. Place pork into sauce pan and add about cup of water
  8. Let it stew over medium heat for about 30 minutes
  9. Mean while stir fry vegetable in the pan just for couple of minutes
  10. Combine vegetables with pork and cook for another 15-20 min
  11. Add more water if required
  12. Season with salt and pepper to taste
