Ingredients
  • 125 g zucchini
  • 125 g eggplant
  • 100 g red pepper
  • ½ red onion
  • 1 small tomato (100 g )
  • 1 garlic glove
  • 1 tbsp oil
  • 1 chicken stock cube
  • 30 ml water
Instructions
  1. Prepare and slice vegetables
  2. Heat oil in the frying pan
  3. Add vegetables and fry for about 5 minutes
  4. Add water, chicken stock cube and garlic
  5. Reduce heat and cook for additional 10-15 minutes until tender.
