Low Carb Creamy Broccoli Cheese and Bacon Soup

Winter is coming and with colder weather we need something warm and comforting. This low carb creamy cheese and bacon broccoli soup is a perfect solution. It was very easy to make and didn’t take much time. My family loved it and it was all gone in no time. No leftovers. Serve with keto bread

  • 1 medium head (400 g) broccoli
  • 2 shallots (80 g)
  • 3 cups chicken broth
  • 1 cup of heavy cream
  • 100 g cooked chopped bacon
  • 100 g grated cheddar cheese
  • 1 TBSP butter
  • Salt, pepper to taste
  1. Separate broccoli into florets
  2. Melt butter in the pot and add chopped shallots
  3. Cook for a few minutes until soft
  4. Add broccoli and chicken broth
  5. Bring to boil and reduce heat to medium
  6. Simmer for about 15 minutes until broccoli fully cooked
  7. Blend with a stick blender
  8. Add chopped bacon, cheese and cream and simmer for a few minutes to infuse flavor and melt the cheese.
  9. Season with salt and pepper if required
  10. Serve with chopped bacon and grated cheese
