Ingredients
  • 1 medium eggplant
  • 1 medium zucchini
  • 1 red bell pepper
  • 1 red onion
  • 5 cherry tomatoes
  • 3 TBSP olive oil
  • 2 garlic cloves
  • ½ tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp paprika
  • salt to taste
Instructions
  1. Preheat oven 200 C
  2. Prepare and slice your vegetable
  3. Place then on the baking tray
  4. Add sliced garlic, herbs salt
  5. Mix everything together
  6. Roast in the oven for 30 min
