Chicken Bacon Broccoli Crustless Low Carb Quiche

This chicken bacon broccoli low carb quiche can be your next breakfast or lunch. It also good cold, that means you easily can bring this in your lunch box. My kids loved it and they were fighting over the last piece. It’s easy to make and it only has 3 g net carbs per serving.

Ingredients:
  • 2 chicken fillets
  • 3 slices of smoked bacon
  • ½ head of broccoli separated into florets
  • 3 large eggs
  • 100 ml fresh cream
  • 100 g grated mozzarella cheese
  • salt pepper to taste
  • oil for frying
Instructions for low carb quiche:
  1. Preheat oven to 200 C
  2. Slice chicken and bacon into strips
  3. Heat oil in the skillet
  4. Cook chicken for about 3-5 minutes until almost ready
  5. Place chicken into baking dish
  6. Using same skillet cook bacon
  7. Place in the same baking dish
  8. Boil broccoli for a about a minute and mix with chicken and bacon
  9. Whisk eggs with a cream, season with salt and pepper and add about half of the cheese to it
  10. Pour over meat and broccoli
  11. Sprinkle with remaining cheese
  12. Bake for about 20-25 until top golden brown
