Low Carb Zucchini Pasta With Prawns

This low carb zucchini pasta with prawns was inspired by one of these delicious video recipes from around the web. I really loved the simplicity of this dish. It is easy, quick, tasty and a very healthy dish overall.  I had only one big problem with that recipe… One portion wasn’t enough and I wanted some more!

Ingredients:
  • 400 g large prawns raw and peeled, deveined
  • 225 g, zucchini (2 small )
  • 1 yellow or red bell pepper
  • ½ red onion
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 1 tbsp, lemon juice
  • salt pepper to taste
Instructions for Low Carb Zucchini Pasta With Prawns:
  1. Preheat oven to 200C
  2. Using a vegetable peeler, peel long strips from the zucchini.
  3. Thinly slice onions and pepper
  4. In the large bowl mix together prawns, vegetables, olive oil, lemon juice, salt and pepper until evenly coated.
  5. Place on the prepared baking tray
  6. Cook in the oven for about 10 min
