
Do you like coconut and raspberries?? Then this low carb berry,coconut mousse is a very easy choice for you. It’s nice, smooth, airy not overly sweet and satisfies sugar cravings. It’s a great treat for after dinner. You can whip it up in minutes and enjoy.
- 100g coconut cream
- 100 g cream cheese
- 1 cup raspberries fresh or frozen
- 6 tsp powdered xylitol or other sweetener of your choice
- 30 g grated 85% Cocoa Chocolate
- Puree raspberries with blender (keep a few berries for decoration)
- Press the processed berries through a fine mesh sieve and discard the seeds
- Whip cream cheese and coconut cream together until nice and smooth
- Add pureed raspberries and sweetener and whip for little bit more until well combined
- Place into 6 prepared small dishes or ramekins
- Decorate with grated chocolate and left over berries.
- Chill for at least an hour
- Serve and enjoy
