Low Carb Fish Pie – Low Carb Fish Recipes
As I mentioned before we eat quite a lot of fish. This low carb fish pie is one of my life savers when I don’t have much time to spend in the kitchen. Healthy vegetables and fish covered with mozzarella cheese… The perfect low carb dinner. I used cod fillets for this recipe but you can use any fish you have or prefer. The same way goes with vegetables. Be creative!
Ingredients:
- 300 g cod fillets
- 200 g zucchini
- 1 red ramiro pepper
- 30 g red onion
- 2 large mushrooms
- 1 Tbs vegetable oil
- 50 ml mayonnaise
- 2 tbs water
- 60 g grated mozzarella cheese
- 1 tsp lemon juice
- salt
- black pepper
Instructions for low carb fish pie:
- Preheat oven 200C
- Prepare and cut vegetables
- Heat oil in the frying pan and fry vegetables until half cooked
- Place fish on the baking dish and drizzle with lemon juice, salt and pepper
- Spread vegetables evenly over fish
- In separate bowl mix together mayonnaise, salt, pepper and water
- Pour mixture over vegetables
- Cover with grated cheese
- Cook for 20-30 min or until cheese brown
- Add some fresh herbs if you like
- Serve and enjoy!
