Low Carb Stuffed Meatloaf Wrapped in Bacon
I made this low carb stuffed meatloaf wrapped in bacon so many times for dinner and it was tasty every time. The leftovers were good for lunch the next day. Sometimes it could be tricky to form meatloaf and wrap with bacon but after couple of times it gets easier. I usually use a wet towel or tin foil to shape a meatloaf.
Ingredients:
- 700 g Beef Mince
- 250 g (about 16 pieces) Smoked Streaky Bacon
- 1 Egg Large
- 2 tbs Olive Oil
- 2 small Red Onions
- 200 g White Mushrooms
- 1 tsp garlic powder
- Salt, pepper to taste
Instructions for Low Carb Stuffed Meatloaf Wrapped in Bacon:
- Preheat oven to 200 C
- Slice mushrooms and one onion and fry them
- Leave aside to cool down
- Place egg and second onion into food processor and pulse until smooth.
- Combine together beef and mixture of onion and egg. Add garlic powder, season with salt and pepper according to your taste.
- Spread meat evenly over wet towel or sheet of tin foil
- Place mushrooms and onions in the middle and shape a meatloaf.
- Wrap with bacon.
- Cook for about 30-40 minutes
