Low Carb Taco Mince with Crispy Cheese – Lazy Tacos 0 940


Here is one more variation of taco mince and cheese. I called this version lazy tacos. If you don’t feel like forming shells from cheese and fill them up, then just break cooked cheese into crumbs and use with your taco mince. It has always worked well for me.

Taco Mince with Crispy Cheese

  • 350 g ground beef
  • 1 medium stalk celery
  • 1 red pepper
  • 2 tbsp mayonnaise
  • 2 tsp taco seasoning or make your own
  • 50 g red onions
  • 100 g, passata or canned tomatoes
  • 150 g,grated cheddar cheese
  • 1 tbsp low carb ketchup
  • sea salt to taste
  • 1 tbsp oil for frying
  • herbs for serving (optional)
Taco mince
  1. Heat oil in the frying pan
  2. Add beef and brown it
  3. Add chopped vegetables and passata
  4. Cook for 10-15 minutes
  5. Add taco seasoning and salt and cook for 5 more minutes
Crispy Cheese
  1. Cut a piece of baking paper to fit your microwave dish
  2. Place some cheese in the middle and microwave on full power for about 2 minutes or until slightly brown (time vary depends on microwave)
  3. Take it out
  4. Leave to cool down
  5. Repeat steps until use all cheese
  6. To serve break cooked cheese into pieces with your hands into empty plate or bowl
  7. Place taco mince on the top
  8. Sprinkle with more crispy cheese pieces
  9. Add some mayo, low carb ketchup and herbs on the top
  10. Serve and enjoy!
